Hi,
1. How do I change the text on the button that says ‘proceed to paypal’?
2. How do I change the background colour for individual pages shop/ cart/ checkout?

Hello,

1) WooCommerce doesn’t have option to change that text. You can try to do it using woocommerce translation files and just change that string only.
2) There is no such option in our theme.

Hi, I have now changed the text in the required file, however as I am using the child theme I don’t see changes appearing?

public_html/wp-content/plugins/woocommerce/i18n/languages/woocommerce.pot > Edit

Im guessing this may not be the right file/ location to edit?

Please, read an article we sent you. You don’t need to edit this file but use it for translations with Loco Translate plugin instead.

Sorry I’m confused. I just need to change the text on the button from “proceed to paypal” to “proceed to payment”. Do we still need to use the translation plugin?

Yes, it would be the easiest way to change this text. Otherwise, you may need to do a customization in some PHP files that is not better solution.
