I was asked to create another ticket, so here it is.
The product builder isn’t supposed to be empty that’s the issue, I do my changes, and I click on Save & Close, it doesn’t save anything.

Hi,
Thanks, I understand now how it works, the templates now display well in the product pages. However, we still have the problem of the custom template with the condition on a category, it does not change, I do changes and I save… nothing changes !

This problem was fixed on our test site, but the fix doesn’t work on your site.
Did you provide FTP access to webdev.meg***gs.fr site? We can’t see the effect of our fix in product-single-options-data.php file, so there is a cache on your server, or you gave us FTP access to another site.
Please download the file – https://we.tl/t-IcmS3GA48A , and upload it into et-core-plugin/app/models/customizer/builder/template-parts folder. Clear cache and check the result.

Hi, I just did everything you asked, still nothing, the issue still persists.
Also, you do have the right ftp access.
For the cache, we have a plugin that’s activated, but we have disabled the caching function, it basically has no effect.

It seems that you have cached data in the database.
Do you have a cache for the database? Have there been any manipulations with the database?
If you are not sure, contact your hosting provider and describe the situation to him.
