How set size table for different products

Hello,

I have a question how I can set a different size table for different products.

For example size table for pants, table with size for jacket and etc.

Is this a possible?

I have one more question. How do I get the products I want to the front?

For example, I have a category of jacket, I want to bring three models of my choice to the first position.
