Incorrect currency shown in the mini cart

The mini cart in the header builder is showing the wrong currency symbol. Everything is in dollars.
I have set the currency in Woocommerce to Pounds (GBP) and when the page loads you can see the pound symbol in the mini cart before it changes to a dollar sign. The symbol is correct on the checkout and cart pages but wrong on the rest of the pages.

I have disabled all non-essential plugins and the issue still exists.

Also, how can I set the layout to without sidebar for all pages without editing every single page to select the “without” option?
