I want to know how to enable the possibility for the user to change the quantity of an item on the off-canva cart.

To enable the option for users to change the quantity of an item in the off-canvas cart, similar to the demo you referenced, please follow these steps: Theme Options > Header Builders > Cart > Show quantity input for products > On.
