I am unable to figure out how to get the products sidebar to list the products in the category form, as found in your demo. my products are arranged by category within WooCommerce but I can only get it to list then in a single list.
Advise.

Go to Appearance > Widgets and drag Woocommerce Product Categories widget into “Product Page Sidebar” area.

I am just trying to get a sidebar panel that shows a hierarchical view of my products, by category. Right now, it just lists the categories. My products are assigned into categories.

sorry for misunderstanding.
Our demo example shows ‘Woocommerce Product categories’ widget displaying parent and child categories of woocommerce products, not categories and products in one list.
If you will check this page: https://www.8theme.com/demo/blanco-wo/shop/product-category/jewelry/bracelets/gold-bracelets/ you will find that ‘Gold bracelets’ is child category for ‘Bracelets’
For example ‘Tungsten ring’ is child category of ‘Rings’ but with only one product assigned:

To achieve this please navigate to Dashboard > Products > Categories and set child categories for parent ones.
