I have found that you can add a status filter so the user can opt to not show products out of stock, like this:

Hello,
Theme Options > General > Enable Classic Widgets Panel > On. Then go to Appearance > Widgets > add the Status widget into the Shop sidebar area

This text comes from XStore, there is no option to change it, so you can use translation files to change it. Install and activate Loco Translate plugin > create a translation for the theme > change English text and disable the Loco plugin https://www.8theme.com/documentation/xstore/theme-translation/base-theme-translation/
When you will need to change the text back, activate the Loco plugin and do this, or just delete translation files.

I use wpml for translating, but i cant find were to change the filters word, i tried searching in the wpml string translation but could not find it, do you know how can i locate the word to translate it?

WPML > Theme and plugins localization > Strings in the themes and Strings in the plugins > scan XStore theme and Core plugin, then find and translate strings via String Translation.
If this doesn’t help, contact support of WPML plugin.
