I need to change the “Shop Now” links on the product pages. Where or how do I do that?

Hello,

Those banners are added in Blanco – Theme Settings > Single Product Page, find the block “Enter custom content you would like output to the product right sidebar” and edit the link replacing “#” in the code href="#" with your link.
