Thank you for providing the correct temporary wp-admin access.
We noticed that you were not able to edit products using Elementor, as the Description area was disabled here – https://prnt.sc/9vNVoFKrHoky Please check how it works now.
To add new sections which are out of the description area, please go to Static blocks in the Dashboard, create blocks with the desired content, then go to Single Product builder > add Custom HTML element into the content area and select your custom static block there.

1/ It appears that this is not a feature of the default WooCommerce functionality. You may need to use an additional plugin to achieve this. You can search for plugins yourself, or contact WooCommerce support for advice – https://wordpress.org/support/plugin/woocommerce/
2/ Single Product Builder > Tabs > you can enable/disable tabs.
