How can I create collections and add them as a mobile menu dropdown?

Basically I want to achieve the effect that this website has – https://yujinclothing.com/ – on my store as well, right now I only have the categories for clothing, but I also want to specifiy them under collections.

I can do that through tags, but how can I then turn the tags into a dropdown menu displaying all of them on mobile? In short I want to make collecteions(in wp I will do it with tags) and turn them into a dropdown menu accessible through every page in the mobile menu. How can I do that? How can I do drop list menus in the mobile menu?
