Hello goodafternoon, I would really appreciate if you tell me how can I deactivate the sizing guide option for some of my categories for example HEADPHONES, SUNGLASSES and keep it for other options like CLOTHING and SHOES.

Hello,

Size guide option you can find in Theme Options(globally one) and in settings of every product separately. Just remove the Size guide content from Theme Options and upload it for some products ([8theme] Product Options > https://prnt.sc/viztbd )
