If you removed Shop page you need just to go to Pages > add new and create Shop page. After that go to WooCommerce > Settings > Products > Display and choose your Shop page from the the drop-down.
WooCommerce doesn’t have the option to create a few shop pages. You may create pages and display products the using 8theme Products VC element but you won’t be able to use WooCommerce filter widgets. This is how WooCommerce works.
