I would like to use the theme in one language: Italian and in one currency: euro, how can I do it.

Follow this article to translate the theme https://www.8theme.com/documentation/xstore/theme-translation/base-theme-translation/ , do not forget about translation for plugins, here is article for WooCommerce – https://docs.woocommerce.com/document/woocommerce-localization/
The desired currency you can set in Dashboard > WooCommerce > Settings > General tab > Currency options

I did what you explained to me, woocommerce translations and loco translate, but the labels are still in English, for example SHOPPING CART, BILLING DETAILS .. ETC, why? (for example, ADD TO CART is correctly translated), i make a mistake?

Some strings can be from the theme or Core plugin, make sure that you translated them there also.
Provide us with temporary wp-admin and FTP access, so we can take a closer look.

We provide particular translation for the theme only http://prntscr.com/sa2lx2
Strings of Core plugin should be translated manually, go Loco translate > Plugins > XStore Core > New language > Choose a language + Choose a location – System > Start translating (you do not need to translate all plugin, just strings visible on frontend)

Hi, if we activated xstore child should we also select xstore theme and not the child one ?
When selecting the child one it is asked to me to create a model.
