Product template changes back to standard template when I set it to theme

Hi,
I have a problem with the product template in my shop. I set all the products to the template “theme” and randomly it changes back to standard template in some products after some time. Why is that? With the standard template the complete simple product builder part is missing so customers can´t buy the product anymore.
