How can I make it so that a customer can shop within a specific brand. For example, the customer selects a brand and then only items within that brand show in the categories and subcategories.

We don’t have such feature, but you may display products via categories, create a separate page for specific category and use Products element in Visual Composer editor. Then select what products to display in the element settings.

That method would be difficult because I’d have to select many products and every time a new product is added I’d have to add it in VC on the page.
Is there some other way I can let the user filter by brand? Something similar to what you have in the product demo?

In this case you can use Brands filter widget in Shop Sidebar in Appearance > Widgets.
