As we change the theme options it seems to the break the site, as well as on the cutomise preview it is showing a 504 error

Update the theme and Core plugin to latest versions – https://prnt.sc/vinesx https://www.8theme.com/documentation/xstore/theme-installation/theme-update/ https://www.8theme.com/documentation/xstore/plugins/plugins-update/
Clear cache and check Theme Options then.
Enable debug mode in WordPress – https://wordpress.org/support/article/debugging-in-wordpress/ to find out what error appears on your site, it will point you in the right direction what needs to be fixed.
Try to disable all the third-party plugins, that do not come bundled with XStore https://www.8theme.com/documentation/xstore/plugins/included-plugins/ , and check how it works then. Enable plugins one by one to find out which one causes the problem.

I have completed all of these tasks, i have no additional plugins and have only just bough and uploaded the theme. It happened when i very first used it before doing anything else.

What about wp-admin access? Create an account via Dashboard (Users > Add new) with administrator role http://prntscr.com/s3rc9m > provide us with username and password via the Private Content area http://prntscr.com/s5mao7 You can use any email for it.

2) Provide us access to your server error logs or send us your server error log file. We need it to find out what generates that 500 error.
