VAT changing without interference This was set to reduced by me and it has gone back to standard

Hello. Many times unfortunately I have set the VAT for products at a specific value.
So far the theme changes this value, without me doing anything. This is very annoying and should not be possible. This way I cannot rely on the Theme and its actually not working properly this way.

Once set by me, it should never change, but it does. Regularly.
I need assistance in understanding why please.

I cannot reproduce it, because I dont “see” it happening.
I know for sure have set all products in particular brand to reduced tax as described in woocommerce settings.

I did this more than once. And I find every week. 3or 4 of the 49 producst have all of a sudden standard tax rates.

Only access is from woocommerce. There are plugins connected to the stock level from sales of connected sites, but they do not interfere with tax rates.
